One of our favourite family dinners and so easy .
Baked fish and roasted vegetables
This is so easy just take a piece of ‘meaty’ fish such as cod or salmon or halibut or whatever you fancy.
Instructions:
Place in the middle of a piece of foil and just sprinkle with salt and pepper slice of lemon and wrap up in foil Bake at 375/190/gas 5 for about 30 minutes.
As for the roasted veg again so easy just put whatever selection of vegetables you like ( I used peppers, courgettes, red onions , mushrooms and cherry tomatoes) in a roasting tin with a little olive oil and salt and pepper and roast on the highest heat in your oven for about 30 minutes.
I usually serve this with cous cous which I just soak with vegetable stock until soft (takes about 10 minutes)
