Chicken shish kebabs with tabbouleh

Ingredients

6 tomatoes, roughly chopped

1 bunch spring onions, trimmed and roughly sliced

250g spinach

¼ small pack fresh mint leaves

300g dried bulgur wheat

1 chicken stock cube

1 heaped tbsp tomato purée

2 tbsp red wine vinegar

For the chicken kebabs:

18 new potatoes

1 heaped tbsp dried Bart Blends Ras El Hanout Spice Mix

1 tbsp red wine vinegar

6 large skinless and boneless chicken breasts, cut into chunks

3 red peppers, deseeded and cut into cubes

Method

1 To make the kebabs, boil the potatoes for 8 minutes, or until almost tender. Drain, leave to cool, then halve. In a large bowl, mix together the ras el hanout and vinegar. Add the chicken chunks, potatoes and peppers and stir to coat. Cover and leave to marinate in the fridge for 1-2 hours.

2 Whizz the tomatoes in a food processor. Tip out into a sieve set over a bowl to drain, keeping the juice. Put the spring onions, spinach and mint in the food processor, then whizz until quite finely chopped, in batches if necessary, and set aside.

3 Put the bulgur wheat in a bowl. Pour the tomato juice into a jug, then add the stock cube and tomato purée and make up to 600ml with boiling water. Stir until dissolved, then pour over the bulgur wheat. Cover with cling film and leave to soak for 30 minutes, or until all the liquid is absorbed. Fluff up the grains with a fork and leave to cool. Once cool, add the chopped tomatoes, spinach mixture and 2 tbsp vinegar. Season to taste and stir well.

4 Thread the peppers, potatoes and chicken chunks alternately onto 12 wooden skewers (pre-soaked in water). Preheat your barbecue or a non-stick griddle pan to hot and cook the skewers for 12 minutes, turning occasionally, or until the chicken is cooked through. Season and serve on top of the tabbouleh.
