SW recipe: Creamy vanilla ice cream

½ Syn per serving

Ingredients

  • 2 egg whites*
  • 4 level tbsp sweetener
  • 600g fat-free natural fromage frais
  • Dash of vanilla essence
  • Slices of fresh pineapple, kiwi and papaya, to serve
  • *Current government guidelines advise that pregnant women, the elderly, babies and toddlers have eggs marked with the British Lion stamp if eating them raw or partially cooked.

Method

  1. In a bowl, whisk the egg whites with the sweetener until the egg whites are stiff but not dry.
  2. In a separate bowl, mix together the fromage frais and vanilla essence. Using a metal spoon, carefully fold the egg white mixture into the fromage frais mixture. Pour into a freezer proof container and freeze until firm, about 2-3 hours.
  3. Remove the vanilla ice from the freezer 15 minutes before serving. Serve in scoops with slices of fresh pineapple, kiwi and papaya.
