Spinach is a vegetable that is often cooked with butter, cream or oil. As tasty as it is, spinach has many virtues!

You could be missing out on the many benefits of this green vegetable, especially its richness in… lutein. Lutein is a fat-soluble pigment (better absorbed in the presence of fat) naturally present in eggs but especially in green vegetables. Its concentration is particularly high in spinach. Lutein is essential to the good health of the retina and also has antispasmodic and relaxing properties for the whole body.

To take advantage of the benefits of this molecule, scientific studies show that spinach should not be cooked because this destroys the lutein. Simply cut the spinach leaves finely to release large quantities.
