  • Low-calorie cooking spray
  • 250g lean turkey mince (5% fat or less)
  • 2 large peppers (red and yellow), deseeded and thinly sliced
  • 2 tbsp fajita seasoning*
  • 160g dried long-grain rice
  • 400ml hot vegetable stock


  1. Spray a medium non-stick saucepan with low-calorie cooking spray and put it over a medium-high heat. Add the turkey and cook for 9-10 minutes or until browned, breaking it up as it cooks. Drain off any fat.
  2. Tip in the peppers and cook for another 10 minutes, then stir through the fajita seasoning and cook for 2 more minutes.
  3. Scatter over the rice
