Melt-in-the-mouth meat, rich flavours and minimal effort… It’s no wonder pulled pork is so popular. And it’s every bit as gorgeous when it’s Food Optimised!

8 hours 20 minutes

Serves 4

  • 300g passata
  • 1 tsp Marmite
  • 4 tbsp dark soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard powder
  • 3 tbsp smoked paprika
  • 4 garlic cloves, crushed
  • 1 level tbsp sweetener granules
  • 1.5-2kg lean pork shoulder, visible fat removed

  1. Mix the passata, Marmite, soy sauce, vinegar, mustard, paprika, garlic and sweetener in a small non-stick pan and simmer over a low heat for 15 minutes or until the sauce thickens.
  2. Meanwhile, put a non-stick frying pan over a high heat and when it’s really hot sear the pork on all sides. Transfer the pork to your slow cooker, pour over the sauce and cook on Low for 8-12 hours (you could also put it all in an ovenproof dish and cook in an oven preheated to 150°C/fan 130°C/gas 2 for 3-4 hours).
  3. Once cooked, shred the pork using 2 forks and serve with Slimming World chips and lots of salad.
