Bonfire Night wouldn’t be complete without the toffee apples! Hereʼs a lower-Syn version…
2½ Syns each
– 6 level tbsp granulated sugar
– 6 level tbsp sweetener granules
– A few drops of red food colouring
– 8 apples
Put the sugar, sweetener and 200ml water in a saucepan and stir over a low heat until the sugar and sweetener have dissolved. Bring to the boil and cook for 6-7 minutes or until reduced considerably.
To check the toffee, take 1 tsp of the toffee mixture and drop it into a bowl of cold water – it should form a hard ball. (You must reach this stage for the toffee to set. If it’s not ready, boil for a further 2-3 minutes and then retest). When it’s ready, add a few drops of food colouring to the pan and swirl to combine.
Using a sharp knife, make a slit in the top of each apple and push some lollipop sticks halfway in.
Arrange the apples, lollipop-sticks up, on a sheet of non-stick parchment. Drizzle over the toffee and allow to set.
