EVERYDAY EASY Serves Ready in about 55 minutes

Ingredients:

4 skinless chicken breast fillets

Salt and freshly ground black pepper

2 slices of wholemeal bread (from a small 400g loaf) finely grated

zest of 1 unwaxed lemon

3 medium eggs. beaten

Low-calorie cooking spray

2 onions, finely chopped

5 garlic cloves, crushed

2 medium carrots, peeled and grated

4 celery sticks, thinly sliced

1 tbsp mild curry powder

600ml chicken stock

1 level tsp cornflour mixed with 2 tsp cold water

4 tsp soy sauce

275g dried basmati rice

150g steamed green beans. to serve

Shredded spring onions and red chilli, to garnish

Method:

1 Preheat your men to 200T.,/fan 180’C/gas 6. tine a large baking tray with baking paper. Place the chicken breasts between cling film, beat until about lcm thick and season.

2 Whizz the bread in a food processor to make fine crumbs. Tip onto a large plate and mix In the lemon zest. Dip the chicken breasts into the egg, then lightly coat each in a quarter of the breadcrumbs. Transfer to the baking tray and set aside

3 Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Stir-fry the onions for 4•5 minutes, then add the garlic, carrots and celery. Stir-fry for 4.5 minutes. then add the curry powder, stock. cornflour mixture and soy sauce and season. Bring to the boil, then simmer gently for 15-20 minutes, or until slightly thickened.

4 Meanwhile, spray the chicken with low-calorie cooking spray and bake for 15.20 minutes. or until cooked through and golden. turning halfway.

5 Cook the rice according to the packet Instructions, then drain. Cut each chicken breast into thick slices. Divide the chicken, sauce. rice and steamed green beans between 4 plates. Garnish with the spring onions and chilli and serve.
