Quark has long been used by dieters as an alternative to more fatty creams and yoghurts and a source of healthy protein.

What is Quark and why is it becoming popular? Quark has been especially popular with those following the Slimming World plan, with reports that sales of this creamy product rocketed by 40% in just one year, back in 2014.

Quark is mild and creamy, and is often likened to products like yogurt and cottage cheese. We think it is a little bit like a mix of both, It’s usually smooth, silky and thick in consistency. Plain quark is high in protein, which makes it filling, yet it’s also typically fat-free. It’s a source of calcium, has no added salt or sugar, and is a Free Food – it’s hardly surprising that Slimming World members love it so much!

What is Quark made from?
It’s made from milk that has been altered by the addition of lactic acid. This ‘acidification’ as it’s known, causes the whey in the milk to split from the curd, and then the solids can be gathered up and turned into Quark.

Is quark suitable for vegetarians?
If you’re a vegetarian you’re likely to be wondering whether quark is something you can add to your shopping basket. Good news – unlike some other types of cheese, rennet (an animal product) isn’t used in the making of quark, so vegetarians don’t have to miss out.

Is Quark healthy?

Most Quark varieties contain no added salt or sugar (as they’re not necessary in the actual forming process), and it’s naturally lower in the stuff than most other dairy ingredients, meaning it’s considered a healthier alternative to things like cottage cheese or yogurt.

What is quark used for?
One of the things that makes quark so amazing is its versatility. Plain, unflavoured quark can be used to add creaminess to both sweet and savoury recipes. It also comes in lots of different low Syn varieties, from vanilla to garlic and herb, Quark can also be eaten as it comes with things like fruit and granola, for a high-protein low-fat breakfast option, or spread on toast for a creamy topper.

Why should I be eating quark?
These days we’re all looking for ways to stay healthy and feel fuller for longer. Quark is the perfect product when it comes that. It’s both naturally low in fat and high in protein.
