SW recipe: All-American burgers with sweet potato wedges

Ingredients:

4 large sweet potatoes, cut into wedges Frylight
1 tsp sweet paprika
500g lean beef mince (5% fat or less) 1 egg, lightly beaten
8 level tsp American-style mustard 1 red onion, ½ grated, ½ sliced
8 turkey rashers
4 x 60g wholemeal rolls, halved
2 level tbsp tomato relish
1 beef tomato, sliced
2 gherkins, sliced
Mixed-leaf salad, to serve

Method:

1 Preheat your oven to 200°C/fan 180°C/gas 6. Put the wedges in a bowl and spray with Frylight. Add the paprika, season and toss to coat. Spread on a large, non-stick baking tray in a single layer and cook for 40-50 minutes, turning halfway.

2 Meanwhile, put the mince, egg, 4 level tsp mustard and grated onion in a bowl. Season, then combine using your hands and shape into 4 burgers. Spray a large, non-stick frying pan with Frylight and place over a medium-high heat. Fry the burgers for 2 minutes on each side until browned. Transfer to a non-stick baking tray lightly sprayed with Frylight. Add to the oven on the shelf below the wedges for the final 10 minutes of their cooking time.

3 Grill the turkey rashers according to the pack instructions. Spread each roll base with a quarter of a level tbsp relish and each lid with 1 level tsp mustard. Fill each roll with a burger, quarter of a level tbsp relish, tomato, sliced onion, gherkins and 2 turkey rashers. Serve 1 burger per person with the wedges and mixed-leaf salad.
