SW recipe: Aloo Gobi

Ingredients:

1 Medium Onion
Low Calorie Cooking Spray
3 Medium Potatoes
1 Med/Large Cauliflower
2 tsp Cumin Seeds
1 tsp Mild Chilli Powder
1/2 tsp Tumeric
2 tsp Coriander
2 tsp Garam Masala
2 tsp Mango Powder
1/4 tsp Salt
Fresh Mint
Fresh Coriander
1 Tomato

Method:

You will need a large non stick wok, spray with your low calorie cooking spray, and pop on a medium heat. Add the onion and fry this off for 4-6 minutes until soft, add the cumin seeds and continue to fry for another couple of minutes.

Add the potatoes and cauliflower stir fry for a further 5-6 minutes. Add the chilli powder, turmeric, garam masala, ground coriander, amchoor and continue to stir fry for a further 3-4 minutes, add the chopped tomato.

Pour in the water and season. Cover and cook for a further 10-15 minutes or until the cauliflower and potatoes are tender, season to your own taste.

Remove from the heat serve in bowls and garnish with fresh mint and fresh coriander.
