SW recipe: Amaretto and ginger cheesecake

Serves 10 Ready in about 45 minutes, plus chilling

Ingredients:

Low-calorie cooking spray

3 medium egg whites

8 ginger nut biscuits, finely crushed

6 sheets leaf gelatine

900g plain quark

3 level tbsp sweetener granules

25ml amaretto liqueur

4 amaretti biscuits, roughly crushed

Edible gold spray, to decorate

Method:

1 Preheat your oven to 180°C/fan 160°C/gas 4. Spray a deep, non-stick, 20cm springform tin with a little low-calorie cooking spray and line the base with baking paper.

2 In a bowl, lightly beat 1 egg white. Add the ginger biscuits and mix well. Tip into the tin and, using the back of a spoon, press down to cover the base evenly. Bake for 12-15 minutes, or until firm. Remove from the oven and leave to cool.

3 Meanwhile, soak the gelatine in a bowl of cold water for 5 minutes, or until softened. Remove the gelatine, squeeze out any excess water and add the gelatine to a saucepan with 2 tbsp water. Heat very gently and stir until dissolved.

4 Put the dissolved gelatine, quark, sweetener and liqueur into a large mixing bowl. Beat until smooth. In a separate clean, glass bowl, beat the remaining egg whites with an electric hand whisk until they form stiff peaks. Fold into the quark mixture with the amaretti biscuits. Pour over the biscuit base and smooth the top. Chill for 4-6 hours, or until set.

5 Carefully remove the cheesecake from the tin and slide onto a cake stand or plate. Put a star-shape piece of paper or card on the top and spray around it with edible gold spray. Cut into 10 slices to serve.
