600g Tesco Healthy Living Pork Mince
A small handful of fresh coriander, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground nutmeg
1 tsp ground cinnamon
3 garlic cloves, finely chopped
Salt and freshly ground black pepper
A small handful of fresh flat-leaf parsley, finely chopped, to garnish
1 Put the mince, fresh coriander. spices and garlic in a bowl. Season and, using your fingers, mix until well combined. Cover and chill in the fridge for 1 hour.
2 Roll the mince mixture into bite-size balls. Place a frying pan sprayed with Fry Light over a medium heat and stir-fry half the meatballs for 6-8 minutes until browned all over and cooked through.
Drain on kitchen paper and keep warm. Repeat with the remaining meatballs.
3 Put the meatballs in a large serving dish and garnish with the parsley. Serve with the tomato, garlic and yogurt sauces for dipping.
