SW recipe: Apple, pear and ginger sundaes

SERVES 4 READY in ABOUT 25 MINUTES, PLUS 1 1/2 HOURS CHILLING TIME

Ingredients:

2 medium dessert apples, such as Granny Smith, peeled, cored and roughly chopped

1 Pear, peeled, cored and roughly chopped

4 tbsp sweetener

1 tsp mixed spice

1 tsp ground ginger

1 ball of stem ginger, drained and finely chopped

4 ginger nut biscuits, coarsely crushed

200g fat-free natural fromage frais

Fresh mint leaves, to decorate

Method:

1 Put the apples, pear and 5 tbsp water in a medium pan and bring to the boil , reduce the heat and stirring occasionally for 8-10 minutes or until the fruit is tender but still holds as shape. Leave to cool.

2 Stir in the sweetener mixed spice and both gingers

3 In 4 dessert glasses layer half the spiced apple mixture followed by half the fromage frais and then half the crushed biscuits. Repeat the layers.

4 Cover and chill in the fridge for 1-2 hours before serving decorated with mint.
