Ready in about 3 hours 20 minutes

Ingredients:

Low-calorie cooking spray

800g lean Lamb leg steaks, all visible fat removed, cut into bite-size chunks

2 large onions, chopped

4 garlic cloves, crushed

2 tsp finely grated fresh root ginger

2 cinnamon sticks

1 tbsp Kashmiri chilli powder, or mild chilli powder

4 cloves

1 star anise

1 tsp ground cardamom seeds

1 tbsp mild curry powder

400g can chopped tomatoes

6 tbsp tomato purée

600ml Lamb or chicken stock

Salt and freshly ground black pepper

1 swede, peeled and cut into large chunks

3 red peppers, deseeded and cut into large chunks

Finely chopped fresh coriander, to garnish

Method:

1 Spray a large flameproof casserole with low-calorie cooking spray and place over a medium-high heat. Cook the lamb in batches for 3-4 minutes until browned all over. Remove with a slotted spoon and set aside.

2 Wipe out the casserole with kitchen paper, spray again with low•calorie cooking spray and reduce the heat to medium. Add the onions and fry for 10-12 minutes, stirring frequently, until soft and golden.

3 Add the garlic, ginger, cinnamon sticks, chilli powder, cloves, star anise and cardamom seeds. Fry for 1.2 minutes, then add the curry powder and lamb and cook for a further 2.3 minutes.

4 Stir in the tomatoes, tomato puree and stock. Season well and bring to the boil. Reduce the heat to very low and cover tightly. Simmer very gently for 2-21i hours, adding the swede and peppers for the last 40 minutes. Remove the cinnamon sticks and star anise. Garnish with coriander to serve.
