Serves 4, ready in 1 hour
• Low-calorie cooking spray
• 2 red onions, chopped
• 4 garlic cloves, thinly sliced
• 4cm piece of root ginger, peeled and finely grated
• 1 red chilli, deseeded and finely chopped
• ½ tbsp ground coriander
• ½ tbsp ground cumin
• ½ tsp turmeric
• ½ tbsp hot paprika
• 1 tsp black mustard seeds
• 1 tbsp tomato purée
• 6 large tomatoes, roughly chopped
• 3 aubergines, cut into bite-sized chunks
• Fresh coriander sprigs, to garnish
• Boiled dried rice or couscous, to serve
• Lime wedges, to serve
1 Spray a large non-stick frying pan with low-calorie cooking spray and cook the onions, garlic, ginger and chilli for 4-5 minutes or until softened, stirring occasionally. Add the spices and cook for a further 1 minute. Add 300ml of water and the tomato purée and stir well. Stir in the tomatoes and aubergines, cover and cook for 45 minutes or until the aubergines are tender.
2 Season to taste, garnish with coriander sprigs and serve hot with rice or couscous and lime wedges to squeeze over.
