SW recipe: Aubergine steak and chips

Serves 4  Ready in about 50 minutes


3 tbsp soy sauce

2 tbsp tomato puree

2 tsp balsamic vinegar

1 tsp onion or garlic granules

2 tsp fresh thyme leaves, Or 1 tsp dried

2 medium aubergines, halved lengthways

3 onions (mix of white and red), thinly sliced

1 level tsp sweetener

1kg floury potatoes, such as Maris Piper, peeled and cut into chips

low-calorie cooking spray

Rocket, to serve

For the ketchup:

4 tbsp tomato puree

150g tomatoes

1 tsp red wine vinegar


1 Mix the soy sauce, tomato puree, 1 tsp balsamic vinegar, the onion or garlic granules and thyme with some freshly ground black pepper, Brush 2 tsp of the sauce over the cut side of each aubergine steak and leave to marinate at room temperature for 30 minutes.

2 Place a nonstick frying pan over a low heat, add the onions with a splash of water and fry fox 25-30 minutes, or until really soft (add a little more water to stop them sticking, if necessary). Add the remaining balsamic vinegar and the sweetener, and season. Increase the heat to medium and continue cooking until the onions are golden brown,

3 Preheat your oven to 200°C/fan iso.C/gas G. Spread the chips on a large, non-stick baking tray in a single layer. Spray with low-calorie cooking spray and bake for 20-25 minutes. turning halfway, or until golden.

4 Meanwhile, whizz together the ketchup ingredients in a blender or food processor. Place a shallow, non-stick griddle or frying pan over a medium-low heat. Once hot, add the aubergine steaks, skin-side down, and cook for 5 minutes. Turn over and cook for a further 5 minutes until really tender, brushing over the remaining sauce for the final minute of cooking.

5 Season the chips, then divide between 4 plates, put the aubergine steaks, onions, rocket, and  Ketchup
