SW recipe: Bacon and pasta salad with ranch-style dressing

Serves 4
Ready in 30 minutes


250g dried small pasta shells

1 cucumber, deseeded and cut into small chunks

4 ready-cooked whole red beetroot, cut into small chunks

250g radishes, cut into small chunks

4 celery sticks, cut into small chunks

8 bacon medallions, visible fat removed

Large pinch of dried Bart Blends Cajun Spice Mix or Schwartz Smoky Cajun Seasoning
For the ranch-style dressing:

150g fat-free natural Greek-style yogurt

1 garlic clove, crushed

3 spring onions, finely chopped

Zest and juice of 1 unwaxed lemon

25g fresh chives, finely chopped, reserving some to serve


1 Cook the pasta according to the pack instructions. Drain, rinse under warm water, then set aside in a colander for 2-3 minutes. In a large bowl, toss together the pasta, cucumber, beetroot, radishes and celery.

2 Mix together all the dressing ingredients. Season, stir through the pasta mixture to coat, then set aside.

3 Preheat a non-stick griddle or frying pan over a medium-high heat until smoking hot. Cook the bacon for 2 minutes on each side (you may have to do this in batches – if so, keep the cooked bacon warm on a plate under foil), or until cooked through.

4 Slice the bacon into small pieces and toss through the pasta mixture. Divide between 4 bowls, then scatter over the reserved chives and the Cajun spice mix to serve.
