SW recipe: Bacon & broccoli risotto

EVERYDAY EASY
Serves 4 Free Ready in 40 minutes

Ingredients:

6 smoked back bacon rashers, visible fat removed

Low-calorie cooking spray

1 onion, finely sliced

2 chicken stock cubes

2 garlic cloves, crushed

250g dried risotto rice

1 head of broccoli, cut into small florets and stalk finely chopped

Juice of 1 lemon

Method:

1 Preheat your grill to high. Grill the bacon for 810 minutes, or until cooked through and crisp at the edges, turning halfway. Turn off the grill, but leave the bacon underneath to keep warm.

2 Meanwhile, spray a large, deep, non-stick frying pan with low-calorie cooking spray and place over a medium-low heat. Add the onion and cook for 4-5 minutes until softened slightly, stirring frequently. Put the stock cubes in a saucepan, pour over 1.2 litres boiling water, then keep over a low heat.

3 Add the garlic and rice to the frying pan. Cook for 2-3 minutes, stirring, until the rice is starting to look translucent. Increase the heat to medium-high. Start to add the stock a ladleful at a time, stirring often and waiting until the liquid has almost gone before adding the next ladleful.

4 After 15 minutes, add the broccoli and continue adding the stock and cooking until the rice is tender. It should take a further 5-10 minutes and you may not need all the stock, or you may need to add extra water.

5 Season the risotto and add the lemon juice. Snip the bacon into bite-size pieces, then pile on top of the risotto. Divide between 4 bowls.
