1 onion, finely chopped
100g back bacon rashers, visible fat removed, diced
2 garlic cloves, crushed
400g can chopped tomatoes
½ tsp dried red chilli flakes
300g dried spaghetti
Mixed salad leaves, to serve
1 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the onion, bacon and garlic for 6-8 minutes, or until lightly coloured, stirring frequently. Add the tomatoes and chilli flakes, and simmer over a low heat for 10 minutes until thickened.
2 Meanwhile, cook the spaghetti according to the pack instructions, but for a minute less. Drain, reserving a ladleful of the cooking water, then add both to the frying pan. Simmer gently for 1-2 minutes, stirring to coat. Divide between 4 bowls, season to taste and serve with the salad on the side.
