SW recipe: Bacon, ham & mushroom carbonara

SUPER SIMPLE
Serves 4 Ready in about 30 minutes

Ingredients:

Low-calorie cooking spray

200g back bacon rashers, visible fat removed, chopped

4 banana shallots, finely chopped

3 garlic cloves, crushed

1 tbsp finely chopped fresh tarragon leaves, plus extra to serve

200g lean cooked ham, visible fat removed, cut into chunks

400g baby button mushrooms, halved

350g dried linguine or spaghetti

2 medium eggs, beaten

4 level tbsp grated fresh Parmesan Rocket, cherry tomato and fresh basil salad, to serve

Method:

1 Spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Stir-fry the bacon and shallots for 5 minutes until golden. Add the garlic, stir-fry for 30 seconds, then add the tarragon, ham and mushrooms and fry for 3-4 minutes.

2 Meanwhile, cook the pasta according to the pack instructions. Drain and return to the saucepan.

3 Quickly mix the beaten eggs into the pasta, stirring vigorously to coat all the strands, until the egg is just cooked. Add the bacon and shallot mixture and 2 level tbsp Parmesan.

4 Divide the carbonara between 4 plates and season with freshly ground black pepper. Divide over the remaining Parmesan and serve with the rocket, cherry tomato and basil salad.
