Ready in about 1 hour 15 minutes, plus 2 hours’ cooling time

Ingredients:

Low-calorie cooking spray

12 ginger nut biscuits, finely crushed

1 medium egg white

4 large eggs

750g quark

250g extra-light soft cheese

40g granulated sugar

8 tbsp sweetener

3 level tbsp cornflour

4 tbsp elderflower cordial

Zest of 3 limes and 2 tbsp juice, plus extra zest to decorate

200g fat-free natural fromage frais

2 level tbsp lime marmalade

Method:

1 Preheat your oven to 200°C/ fan 180°C/gas 6. Spray a 22cm-diameter springform cake tin with ow.calorie cooking spray Line the base with baking paper.
2 Put the crushed biscuits in a bowl. Lightly beat the egg white until frothy, add to the biscuits and stir. transfer to the tin and push into the base using the back of a spoon. Bake for 10 minutes until crisp, then remove and turn the oven up to 240″C/fan 220″C/gas 9.
3 Beat together the eggs, quark, soft cheese. sugar. sweetener, cornflour. cordial, lime zest and 1 tbsp of the Juke. Pour onto the biscuit base and shake the tin to even it out. Bake for 10 minutes, then lower the heat to 110°C/fan 90’C/gas Y. and bake for a further 25 minutes.
4 Turn off the oven and shake the tin – there should be a slight wobble in the centre. Leave the cheesecake in the oven to cool for 2 hours, then chill until ready to serve. You can make the cheesecake up to 24 hours ahead.
5 To serve, transfer the cheesecake to a plate. discarding the baking paper. Top with the fromage frais. Mix the marmalade with the remaining lime Juice and swirl on top of the fromage frais. Decorate with the lime zest and cut into 10 slices to serve.
