Low-calorie cooking spray
300g plain quark
4 level tbsp granulated sweetener
2 level tbsp cornflour
Finely grated zest of 1 large navel orange, scrubbed in hot water to remove any wax
Finely grated zest of 1 unwaxed lemon
2 large eggs, plus 1 large egg yolk
200g fat-free natural fromage frais
1 navel orange, thinly sliced, to decorate
For the base:
2 large eggs whites
8 reduced-fat digestive biscuits, finely crushed
Preheat your oven to 180°C/fan 160°C/gas 4.
Lightly spray a 20cm round springform cake tin with low-calorie cooking spray and line the base with baking paper.
For the biscuit base, lightly beat the 2 egg whites until frothy and stir into the biscuits. Spoon into the tin and press down with the back of a spoon to cover the base evenly. Bake for 10 minutes, then set aside.
Increase the oven to 240°C/fan 220°C/gas 9. Using an electric whisk, beat the quark, sweetener, cornflour and orange and lemon zest together in a bowl until smooth. Beat in the whole eggs and egg yolk. Stir in the fromage frais. Pour over the biscuits and bake for 10 minutes.
Reduce the oven to 110°C/fan 90°C/gas ¼ and bake for a further 50-60 minutes, or until the mixture is set but still slightly wobbly in the centre. Turn off the oven, leave the door ajar and leave the cheesecake inside to cool completely.
Run a palette knife around the edge of the cheesecake. Carefully remove it from the tin, peel off the baking paper and transfer to a serving plate. Decorate with the orange slices and cut into 8 to serve.
