SW recipe: Balsamic chicken farfalle

Serves 4 Ready in 20 mins


500g dried farfalle or other pasta shapes

200 trimmed green beans, valved

1 orange pepper, deseeded and thinly sliced

400g skinless chicken breast mini fillets, halved lengthways

Salt and freshly ground black pepper

low-calorie cooking spray

Half a bunch of spring onions, sliced

1 garlic clove, crushed

1tbsp balsamic vinegar

400g passata

Small handful of fresh basil leaves, to garnish


1 Preheat the grill to medium-high. Cook the pasta according to the packet instructions, adding the beans and pepper for the last 4 mins of the cooking time. Drain and keep warm. Meanwhile, season the chicken well, lightly spray with low-calorie cooking spray and grill for 4 mins on each side or until cooked through.

2 Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the spring onions and garlic and stir-fry for 1 min before adding the balsamic vinegar and passata. Bring to the boil and cook for 3-4 mins. Add the cooked pasta, beans, pepper and chicken to the passata. Toss to mix well, season and remove from the heat.

Serve in wormed bowls, garnished with fresh basil leaves.
