1kg floury potatoes, such as King Edward or Maris Piper, peeled and cut into thick chips

Low-calorie cooking spray

4 thick skinless and boneless cod or haddock fillets

2 medium eggs, separated

800g garden peas

Lemon wedges, to serve
For the tartare sauce:

4 tbsp roughly chopped pickled gherkins

1 small red onion, finely chopped

1 tbsp capers, drained and rinsed

2 level tbsp extra-light mayonnaise

200g fat-free natural fromage frais

Zest of 1 unwaxed lemon

Small handful fresh dill, finely chopped


1 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the chips for 5 minutes, then drain well. Return to the pan and shake to roughen their edges. Spread on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and bake for 25-30 minutes, or until golden, turning halfway.

2 Meanwhile, mix together the tartare sauce ingredients, then set aside. Line a non-stick baking tray with baking paper, then put the fish fillets on top and season.

3 Whisk the egg whites in a large, clean, glass bowl until they form soft peaks. In a separate bowl, lightly whisk the egg yolks, then whisk in the egg whites and a pinch of salt. Divide the batter over the fish fillets, gently spreading over the tops. Add the fish to the oven for the final 10-12 minutes of the chips’ cooking time, or until the batter is lightly golden and the fish is cooked through.

4 While the fish and chips are cooking, boil the peas for 2-3 minutes. Drain, then roughly crush using a potato masher or fork. Divide the fish, chips and peas between 4 plates, and serve with a quarter of the tartare sauce per person and the lemon wedges.
