SW recipe: BBQ pork & beans

Ingredients

1 tbsp sweet smoked paprika
1 tbsp mustard powder
1 tsp celery salt
2 pork fillets, all visible fat removed (around 900g in total)

For the beans:

Low-calorie cooking spray
6 back bacon rashers, all visible fat removed, chopped
1 large onion, chopped
3 garlic cloves, chopped
Salt and freshly ground black pepper
3 tbsp tomato purée
1 tbsp hot smoked paprika
2 tbsp mustard powder
100ml cider vinegar
3 x 400g cans cannellini beans, drained and rinsed
3 tbsp sweetener

For the tomato salad:

8 red or yellow tomatoes, sliced
1 cucumber, sliced
1 red onion, thinly sliced
1 tbsp balsamic vinegar

Method:

1 For the beans, spray a large pan with low-calorie cooking spray and place over a medium-high heat. Fry the bacon until golden, then remove from the pan. Turn the heat to low, add the onion and garlic, season and cook for 8 minutes, or until soft. Return the bacon to the pan with the remaining bean ingredients and 200ml water, cover and simmer for 30 minutes.

2 Meanwhile, mix the paprika, mustard powder and celery salt with some black pepper, then rub all over the pork. Preheat your barbecue to medium-hot and grill the pork for 7-8 minutes each side, or until cooked through (or preheat your oven to 220°C/fan 200°C/gas 7 and roast for 25 minutes). Remove from the heat and leave to rest for 10 minutes.

3 Arrange the tomatoes, cucumber and onion in a dish, drizzle over the balsamic vinegar and season with black pepper. Slice the pork and serve with the beans and salad.
