SW recipe: Bean & rice cottage pie

EVERYDAY EASY
Serves 4 OM Ready in about 1 hour 20 minutes

Ingredients:

50g dried brown basmati rice

Low-calorie cooking spray

1 large onion, chopped

1 large carrot, finely chopped

2 large celery sticks, finely chopped

1kg floury potatoes, peeled and cut into small chunks

400g can aduki beans (or 400g can lentils), drained and rinsed

3 tbsp tomato purée

2 tsp yeast extract

1 tsp dried red chilli flakes (optional)

1 tsp dried mixed herbs

350ml vegetable stock

300g mixed frozen veg of your choice, to serve

Method:

1 Cook the rice according to the pack instructions. Meanwhile, spray a medium, non-stick, lidded saucepan with low-calorie cooking spray and place over a low heat. Add the onion, carrot, celery and a splash of water. Season, cover and cook for 10 minutes. Uncover, increase the heat to medium and continue to cook, stirring, until the onions are lightly browned.

2 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the potatoes for 20 minutes, or until tender. While the potatoes are cooking, drain the rice, then stir into the onion mixture with the aduki beans or lentils, tomato puree, yeast extract, chilli flakes (if using), dried herbs and 300ml stock. Simmer for 15 minutes, or until the liquid has reduced and the mixture has thickened, but is still moist.

3 Drain the potatoes, then return to the pan, season and mash with the remaining stock until smooth. Spoon the rice mixture into a medium ovenproof dish, then spread the mashed potatoes over the top and rough up with a fork. Bake for 30 minutes, or until the top is golden and the filling is piping hot.

4 Meanwhile, cook the frozen veg according to the pack instructions then drain. Add freshly ground black pepper and serve with the pie.
