400g dried pasta shapes, such as penne
100g green beans, trimmed
Low-calorie cooking spray
1 small onion, very finely chopped
1 celery stick, finely chopped
1 red chilli, deseeded and chopped
2 garlic cloves, crushed
400g can borlotti beans, drained and rinsed
400g can butter beans, drained and rinsed
400g can cannellini beans, drained and rinsed
6 tomatoes, diced
Small pack fresh parsley, chopped
2tbsp balsamic vinegar
• Cook the pasta according to the pack instructions, adding the green beans for the last 3 minutes of the cooking time. Drain, refresh under cold running water and drain again, then tip into a large serving bowl. Meanwhile, spray a large non-stick saucepan with low-calorie cooking spray and place over a low heat.
• Add the onion, celery and chilli and cook gently for 5 minutes or until just softened, stifling occasionally. Add the garlic and cook for 1 minute, then add all the beans and tomatoes and season to taste. Toss well, remove from the heat and set aside. Add the veg and beans to the pasta along with the parsley and vinegar, and toss well.
