SW recipe: Beef and broccoli ramen

Ingredients:

– 6 garlic cloves, crushed

– 3cm piece fresh root ginger, peeled and grated

– 1 level tsp chilli paste

– 2 tbsp red wine vinegar

– 1 level tsp sweetener granules

– 4 tbsp oyster sauce

– 500g lean rump steak, visible fat removed, sliced

– 250g dried medium egg noodles

– 1 broccoli head, cut into small florets

– 1 litre boiling beef stock

– 2 tbsp dark soy sauce

– 250g pak choi, white and green parts separated, thickly sliced

– 4 spring onions, halved and shredded

Method:

  1. Put 2 crushed garlic cloves, the ginger, chilli paste, vinegar, sweetener, oyster sauce, 1/2 tsp salt and plenty of black pepper in a large bowl and mix it all together. Add the steak, toss to coat well and set aside.

  2. Bring some water to the boil in a large non-stick saucepan or casserole pan over a high heat. Add the noodles and broccoli, cook for 4 minutes then drain and set aside.

  3. Add the beef to the pan and stir-fry for 1-2 minutes or until it has just changed colour. Transfer to a plate.

  4. Pour the stock into the pan, add the soy sauce, remaining garlic and white pak choi stalks and bring to the boil. Stir in the beef, noodles, broccoli and green pak choi leaves and bring back to the boil to heat through, stirring.

  5. Divide between bowls and serve with the spring onions to scatter over.
