SW recipe: Beef in mushroom sauce

SERVES 4 READY IN ABOUT 30 MINUTES

Ingredients:

Fry Light

tb/454g beef steaks, all visible fat removed, cut into thin strips

1 leek, halved lengthways and cut into strips

1 carrot, peeled and cut into matchsticks

1 courgette, cut into matchsticks

4 open-cap mushrooms, sliced

2 level tsp French mustard

1/4pt/142ml beef stock

6 tbsp fat-free natural yogurt

A handful of fresh parsley, chopped, to garnish

Method:

1 Place a frying pan sprayed with fl-y Light over a high heat and stir-fry the beef for 3-4 minutes until seared. Add the vegetables to the pan and stir-fry for a further 5-7 minutes.

2 Add the French mustard and stock. Rim the heat down to low, cover and simmer for 20 minutes until the beef is cooked through.

3 Remove the pan from the heat and stir in the yogurt. Divide between

4 bowls or plates, garnish with the chopped parsley and serve.
