1 tsp ground allspice

2 cloves

1/4 tsp fennel seeds

1/2 tsp peppercorns

1 tsp cumin seeds

1 cinnamon stick

2 dried bird’s-eye chillies, finely chopped

1 red chilli, finely sliced, plus a little to garnish

3 garlic cloves, finely chopped

1/2 oz/14g plain chocolate, grated

2lb/908g beef sirloin or fillet, all visible fat removed, cut into bite-size cubes

1 onion, finely chopped

852ml beef stock

400g can chopped tomatoes

1/2 lime, finely sliced to garnish


1 Make the mole mixture by combining the allspice, cloves, fennel seeds, peppercorns, spices, chillies, garlic and chocolate in a bowl.

2 Heat a flame-proof casserole dish sprayed with Fly Light. Add the cubes of beef and fry for 5-6 minutes over a high heat. Once browned on all sides, add the onion and garlic and cook for a further minute.
