SERVES 4 (sauce only) READY IN ABOUT 30 MINUTES
Low-calorie cooking spray
450g lean beef mince (5% fat or less)
4 rashers smoked back bacon, all visible fat removed, roughly chopped
2 garlic cloves, finely chopped
1 leek, finely chopped
1 red pepper, deseeded and cubed
2 carrots, peeled and cubed
1 tsp dried oregano
A large handful of fresh basil, finely chopped, plus a handful of small basil leaves, to garnish
400g can chopped tomatoes
Salt and freshly ground black pepper
350g dried millerighe pasta (large tubes), or other pasta shape
30g parmesan, finely grated, to garnish
A watercress, rocket and spinach salad, to serve
1 Spray a large frying pan with low-calorie cooking spray and place over a high heat. Add the mince and bacon and cook for 4-5 minutes, or until the beef is browned all over. Add the garlic, leek, red pepper and carrots and cook for a further 5 minutes.
2 Add the oregano. basil and tomatoes and season. Bring the mixture to a simmer, then cover and cook for 10 minutes.
3 Meanwhile, cook the pasta according to the packet instructions. Drain well.
4 Divide the pasta between 4 warmed bowls and spoon over the ragù. Garnish with the basil leaves and parmesan. Serve immediately with the salad.
