SW recipe: Beef stroganoff

Ingredients

  • 380g lean fillet steak, visible fat removed
  • Low-calorie cooking spray
  • 2 onions, finely chopped
  • 1 garlic clove, crushed
  • 280g button mushrooms, halved
  • Pinch of grated nutmeg
  • 8 level tbsp half-fat crème fraîche
  • 8 tbsp fat-free natural yogurt
  • 2 tbsp chopped gherkins
  • Chopped fresh parsley, to serve

Method

  1. Place the steak between two sheets of cling film, flatten with a rolling pin and cut into thin strips.
  2. Spray a non-stick frying pan with low-calorie cooking spray, and place over a medium heat. Add the onions and garlic and stir-fry for 3-4 minutes. Add the mushrooms, nutmeg and steak and cook for 5-7 minutes, or until the steak is cooked to your liking.
  3. Mix the crème fraîche with the yogurt, stir into the beef mixture along with the gherkins and heat through (do not boil). Season lightly and serve immediately, sprinkled with the parsley.
