SW recipe: Best-ever burgers and sweet potato fries

Ingredients

For the fries:

1kg sweet potatoes, peeled and cut into thin fries

Low-calorie cooking spray

1 tsp dried rosemary

For the burgers:

6 smoked bacon rashers, visible fat removed, roughly chopped

500g lean beef mince (5% fat or less)

½ tsp onion granules

½ tsp garlic granules

2 tsp Worcestershire sauce

1 egg yolk

½ tbsp dried oregano

 

For the burger sauce:

4 level tbsp extra-light mayonnaise

1 tsp tomato purée

¼ tsp garlic granules

½ tsp onion granules

½ tsp mustard powder

1 tsp gherkin liquid

 

For the salad and to assemble:

2 little gem lettuces, 4 leaves picked, the rest roughly torn

2 beef tomatoes, 1 cut into 4 slices,

1 roughly chopped

3 gherkins, 1 cut into thin slices, the rest finely chopped

4 x 60g wholemeal rolls, split

½ red onion, cut into thin rings

Method

1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the fries on your largest non-stick baking tray in a single layer, or use 2, and spray with low-calorie cooking spray. Scatter over the rosemary, season and toss together until well coated, then spread out in a single layer again. Cook for 40 minutes, or until golden, turning halfway.

2 Meanwhile, put the bacon in a food processor and whizz until finely minced. Tip into a mixing bowl with the remaining burger ingredients and mix together well with your hands. Form the mixture into 4 burger patties, around 1½cm thick, then set aside to rest.

3 Mix together all the burger sauce ingredients, check the seasoning and set aside. To make the salad, toss together the torn lettuce, and the chopped tomatoes and gherkins, then set aside.

4 Heat a large, lidded, non-stick frying pan over a medium-high heat. Spray the burgers with low-calorie cooking spray. Once the pan is hot, fry the burgers for around 3 minutes on one side, then flip and fry for 1 minute. Pour about 50ml just-boiled water into the pan, then cover and cook for a further 2-3 minutes – the water in the pan will steam the burgers and keep them moist.

5 Once the burgers are cooked, transfer them to a chopping board to rest for 1 minute. To assemble, top each roll base with some onion rings, a tomato slice, some gherkin slices, a lettuce leaf, a burger, one-quarter of the burger sauce and the roll lids. Serve with the fries and salad.
