SW recipe: Bircher muesli

Bircher muesli Serves 4 Ready in 13 minutes


50g porridge oats

Juice of 1 orange

1tbsp sweetener

3 apples

400g fat-free natural yoghurt

A few drops of vanilla essence

2oog drained, canned apricots in natural juice, thinly sliced

200g blackberries


1 Place the oats in a large bowl, pour over 200m1 cold water and stir in the orange juice and sweetener. Cover and leave in the fridge for 2 hours or overnight, if time permits.

2 When ready to eat, peel, core and grate one of the apples and slice the remaining two. Mix the yoghurt with the vanilla essence. Stir the grated apple into the oat mixture with half of the yoghurt.

3 Transfer the muesli into individual bowls and top with the sliced apples and the apricots and blackberries. Divide the remaining yoghurt between the bowls and serve.
