2 large carrots, diced
1 small onion, finely chopped
125ml white wine vinegar
100g dried basmati rice
3 x 400g cans black-eyed beans, drained and rinsed
4 large eggs
1 tbsp extra virgin olive oil
Juice of 2 limes
1 tsp sweetener
½ small pack chopped fresh parsley
2 yellow peppers, deseeded and sliced
8 black olives in brine, drained and pitted
400g large cavolo nero or kale leaves
Put the carrots and onion in a bowl with 100ml vinegar. Season with salt and set aside for 30 minutes.
Meanwhile, cook the rice according to the pack instructions, then drain and put in a bowl with the black-eyed beans. Boil the eggs for 7 minutes and drain. Cool under cold running water, then peel, quarter and set aside.
Stir the remaining vinegar into the rice and beans along with the oil, lime juice, sweetener, parsley, peppers, olives and pickled carrots and onion, and season to taste.
Preheat a non-stick griddle or frying pan to hot and char each cavolo nero or kale leaf on both sides. Roughly chop and mix through the beans. Divide the bean salad between 4 plates and serve topped with the egg quarters.
