SW recipe: Boozy fruit brulées


2 level tbsp caster sugar
2 clementines, peeled and segmented
200g prepared mango chunks
1 tbsp brandy or Cointreau
1 level tbsp sweetener (optional)
500g fat-free natural yogurt


Put the sugar in a small pan and melt over a medium heat, stirring occasionally, to make the caramel. It’s ready when the sugar has completely melted and is golden in colour – this will take about 10 minutes.
Meanwhile, put the fruit into a large bowl and sprinkle over the brandy or Cointreau and sweetener, if using. Mix well and divide between 4 heatproof ramekins or small dishes. Spoon the yogurt over the fruit to cover and level the top of each serving.
Take the caramel off the heat. Wrap a tea towel around your hand and add a tablespoon of hot water (very carefully, in case it spits). Stir well and leave to cool for a minute or two, then spoon the caramel over the yogurts, giving an equal amount to each one.
Cool and chill until you’re ready to eat.
