SW recipe: Boulangère potatoes with sage

Ingredients

Low-calorie cooking spray

1 onion, finely sliced

4 garlic cloves, crushed

1kg new potatoes, thickly sliced

25g pack fresh sage, leaves picked

1 litre hot chicken stock

Method

1 Preheat your oven to 200°C/fan 180°C/gas 6. Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onion and stir-fry for 5-6 minutes until softened and a little coloured. Reduce the heat to medium-low, add the garlic and stir-fry until fragrant.

2 In a baking dish, toss the potatoes with the onion mixture and sage leaves and season. Pour over the stock and bake for 1 hour 45 minutes, or until the potatoes are really soft, and the stock has reduced and thickened slightly. Serve with the pork and veg, and fennel salad.

COOK’S NOTE
The stock creates a tasty sauce, so for best results go for ready-to-use liquid chicken stock, rather than cubes.
