SW recipe: Broad bean dip with iced crudités

Serves 4-6. Ready in 30 minutes, plus chilling

Ingredients:

  • 900g fresh broad beans, shelled (or use 400g frozen broad beans)
  • Low-calorie cooking spray
  • 1 garlic clove, crushed
  • 1 red chilli, deseeded and finely chopped
  • Juice of half a lemon
  • Salt and freshly ground black pepper
  • Small handful of finely chopped fresh mint

for the crudités

  • 1 large carrot, peeled and cut into batons
  • 2 celery sticks, cut into batons
  • 1 cucumber, cut into batons
  • 150g baby sweetcorn

Method:

First prepare the crudités, pop them into a bowl of iced water and chill until needed.

Cook the broad beans in a saucepan of boiling water for 2-3 minutes (5 minutes if using frozen beans) or until just tender.

Drain and refresh under cold running water, then drain again. Remove the tough broad bean skins.

Spray a large, non-stick frying pan with low-calorie cooking spray and place over a low heat.

Add the garlic and most of the chilli, and cook for 2-3 minutes. Then add the beans and cook for 1 minute.

Transfer the beans to a food processor, along with the lemon juice, and blend to a smooth purée, adding a splash of hot water if the mixture is too stiff.

Season to taste, stir in the mint and spoon into a serving bowl.

Scatter remaining chilli over the dip and serve with crudités.
