SW recipe: Broccoli & choi sum in oyster sauce

SUPER SIMPLE

Serves 4

Ready in about 20 minutes

Syns per serving: FREE

Low-calorie cooking spray

200g thin-stemmed broccoli, sliced lengthways

2-3 garlic cloves, very thinly sliced

1 red chilli, deseeded and thinly sliced

3cm piece fresh root ginger, peeled and finely sliced into matchsticks

200g choi sum, roughly chopped

200ml cooled vegetable stock

1 tbsp dark soy sauce

1 level tsp cornflour

2 tbsp oyster sauce

1 Spray a wide, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Stir-fry the broccoli for 2-3 minutes, adding a splash of water to create some steam.

 

2 Stir in the garlic, chilli, ginger and choi sum and stir-fry for 1-2 minutes. Mix together the stock, soy sauce and cornflour and pour over. Bring to the boil, then bubble for 2-3 minutes. Stir in the oyster sauce, cook for a further 1-2 minutes, then serve.

COOK’S NOTE
If you can’t find choi sum (a leafy green veg), pak choi will also work
