4 skinless and boneless chicken breasts

Low-calorie cooking spray

1 tbsp Bart Blends or JD Seasonings dried Cajun spice mix

400g floury potato, such as Maris Piper peeled and roughly chopped

340g can sweetcorn drained,

130g plain quark

1 small white cabbage, finely shredded

2 carrots, peeled and grated

4 spring onions, thinly sliced

1 tbsp white wine vinegar

1 level tsp sweetener


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread out the chicken breasts in a non-stick baking tin. Spray with low-calorie cooking spray, then sprinkle over the Cajun spice mix. Bake for 20 minutes.

2 Meanwhile, boil the potato for 10 minutes, or until tender. Drain, then mash until smooth. Using a stick blender, whizz the sweetcorn until creamy. Stir the creamed corn and 30g of the quark into the mash and season.

3 In a large bowl, mix together the cabbage, carrots and spring onions. In a small bowl, whisk together the remaining quark, white wine vinegar, 1 tbsp water and the sweetener. Add the quark dressing to the coleslaw, season to taste and toss to combine.

4 Divide the creamed corn and slaw between 4 plates. Cut each chicken breast into thick slices and place on top of the creamed corn to serve.
