Low-calorie cooking spray
4 frozen Slimming World Pork Sausages, defrosted
4 large skinless and boneless chicken thighs
1 large onion, halved and thinly sliced
1 large carrot, peeled and chopped
3 celery sticks, sliced
4 garlic cloves, thinly sliced
3 tbsp tomato purée
400ml hot chicken stock
2 x 400g cans white beans, such as cannellini or haricot, drained and rinsed
1 tsp dried thyme
2 bay leaves
Chopped fresh flat-leaf parsley, to serve
1 Spray a flameproof casserole dish or a large, lidded, non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the sausages, fry until golden brown all over, then transfer to a plate. Spray the dish or pan with a little more low-calorie cooking spray if needed, then add the chicken and fry gently until golden, turning occasionally. Set aside with the sausages.
2 Add the onion, carrot, celery and 4 tbsp water to the dish or pan. Cover and cook over a low heat for 10 minutes, or until soft.
3 Stir in the garlic, tomato purée and stock. Add the sausages, chicken, beans, thyme and bay leaves, and season. Simmer uncovered for 20-25 minutes, or until the stock has reduced and the sausages and chicken are cooked through. Discard the bay leaves, top with the parsley and a twist of black pepper. Serve with your favourite Speed Food veg.

You can also snack on these to satisfy your hunger in between meals.
In addition, you are encouraged to eat measured quantities of certain foods, known as ‘Healthy Extras’ that provide nutrients essential for a healthy, balanced diet.
These include milk and cheese (for calcium) and cereals and wholemeal bread (for fibre and minerals).
And so you never feel deprived you can enjoy limited amounts of treats which are higher-calorie, less filling foods that include chocolate, crisps and alcohol.
