4 Slimming World Syn-free Pork Sausages (available from Iceland, or see tip), thawed
4 large chicken thighs, thawed if frozen, skinned
1 large onion, halved and thinly sliced
1 large carrot, peeled and chopped
3 celery sticks, sliced
4 garlic cloves, thinly sliced
3 tbsp tomato purée
400ml boiling chicken stock
2 x 400g cans white beans such as cannellini or haricot, drained and rinsed
1 tsp dried thyme
2 bay leaves chopped fresh parsley, to serve or whatever you want
Spray a non-stick casserole pan or large deep saucepan with low-calorie cooking spray and place over a medium heat.
Add the sausage fry until golden brown all over and lift them on to a plate. Spray the pan with a little more low-calorie cooking spray if needed, add the chicken thighs and fry gently until golden, turning occasionally. Set aside with the sausages.
Add the onion, carrot. celery and 4 tbsp water to the pan. Cover and cook over a low heat for 10 minutes or until soft.
Uncover the pan and stir in the garlic, tomato purée and stock. Stir in the sausages, chicken thighs, beans, thyme, bay leaves and some seasoning and simmer for 20-25 minutes or until the stock has reduced and the chicken is cooked through. Discard the bay leaves and sprinkle with the parsley to serve.
If you can’t get Slimming World Sausages, use frozen Quorn Low fat Sausages or use another low-fat sausage instead and count the Syns.
