SERVES: 4 READY IN: 20 MINUTES
Low-calorie cooking spray
3 peppers (any colours), deseeded and diced
1 mild green chilli, deseeded and finely chopped
400g (14oz) can or carton black beans or red kidney beans, drained and rinsed
8 spring onions, thinly sliced
12 large eggs, beaten
A few shakes of Tabasco sauce
2 tomatoes, diced
50g (2oz) reduced-fat Cheddar cheese, coarsely grated
Salad, to serve (optional)
1. Spray a large, lidded non-stick frying pan with low-calorie cooking spray and place over a medium-high heat.
2. Add the peppers and 2 tbsp water, cover and cook for 5 minutes or until just tender. Add the chilli, beans and half the spring onions, cover again and cook for 5 mins or until the spring onions are soft and the beans have heated through. Reduce the heat to medium.
3. Preheat the grill to high. Season the eggs, add them to the pan and gently scramble with a spatula until they are almost done but still moist and very slightly soft here and there. Remove the pan from the heat.
4. Sprinkle the Tabasco over the eggs and scatter over the tomatoes, remaining spring onions and the cheese. Finish under the grill for 2-3 mins or until set to your liking. Serve hot with a side salad.
