2 Boneless chicken breasts ; Skinless, Cubed
2 Chicken drumsticks ; Skinless and boneless, cubed
2 Chicken thighs ; Skinless and Boneless, cubed
350 g Arborio Rice
1.2 litres Chicken Stock ; Hot
2 Leeks ; Finely sliced
4 tbs Parmesan grated ; level
1. Spray a large non-stick frying pan or saute pan with low-calorie cooking spray and place over a high heat. Cut the chicken into bitesized chunks, add to the pan and fry for 5 minutes or until beginning to brown.
2. Reduce the heat to medium-low and add the rice and stock (don’t worry if you don’t have room for all the stock – you can add it in stages as you stir the risotto. Simmer for 10 minutes, stirring frequently to give a lovely creamy texture.
3. Stir in the garlic and leeks and simmer for a further 15-30 minutes or until the rice is just cooked and most of the stock has been absorbed, stirring frequently.
4. Sprinkle over the Parmesan, grind over a little black pepper and serve hot.
