SW recipe: Cheesy Cumberland pie

Serves 4

Low-calorie cooking spray
1 large onion, finely chopped
2 carrots, peeled and thickly sliced
4 celery stalks, thickly sliced
600g lean beef mince (5% fat or less)
300g button mushrooms, sliced
400g can chopped tomatoes
300ml beef stock
1 bay leaf
A small handful of fresh thyme leaves or 1 tsp dried thyme
6 tbsp tomato purée
Salt and freshly ground black pepper
900g floury potatoes, such as Desiree or King Edward, peeled and chopped
100ml boiling hot vegetable stock
160g reduced-fat Cheddar, grated
300g baby carrots, thinly sliced lengthways
200g baby sweetcorn, halved lengthways
1 medium fennel bulb, thinly sliced lengthways
1 tbsp light soy sauce


1 Preheat your oven to 200°C/ fan 180°/gas 6. Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Stir-fry the onion, carrot and celery for 5 minutes until soft.

2 Add the mince and mushrooms and stir-fry for 5-6 minutes to brown. Add the tomatoes, beef stock, bay leaf, thyme and tomato purée and stir well. Bring to the boil, then cover and simmer gently for 30 minutes, stirring occasionally. Season well.

3 Meanwhile, boil the potatoes for 15 minutes, or until tender. Drain and mash with the stock. Season well and stir in 60g of the cheese. Spoon the mince into an ovenproof dish and remove the bay leaf. Top with the mash, sprinkle over the remaining cheese and bake for 30 minutes, or until golden brown.

4 Steam the vegetables for 3-4 minutes, or until tender. Drain and return to the pan. Add the soy sauce, season and toss well before serving with the pie.
