SW recipe: Cheesy leek frittata

Serves 4 Syns per serving 1 Ready in 50 minutes

Ingredients:

125g frozen peas, defrosted

20g fresh chives, finely chopped

250g asparagus, trimmed and cut into 5cm lengths

100g rocket dressed with lemon juice, to serve

2 leeks, cut into 1cm-thick slices

Low-calorie cooking spray

150g frozen spinach, defrosted and water squeezed out in a sieve

8 medium eggs

75g fat-free natural cottage cheese

30g reduced-fat Cheddar, grated

2 spring onions, finely sliced

Method:

1 Preheat your oven to 180°C/ fan 160°C/gas 4. Spread the leeks in a 30 x 20cm non-stick roasting tin and spray with low-calorie cooking spray. Season and roast for 15 minutes until softened, turning halfway. Finely chop the spinach and set aside.

2 Crack the eggs into a mixing bowl and beat with a fork. Add the cottage cheese, half the Cheddar, the spring onions, peas, chives and spinach. Mix well and season to taste.

3 Spray the exposed tin and leeks with low-calorie cooking spray, then add the egg mixture. Top with the asparagus and remaining Cheddar. Bake for 15-20 minutes, or until the eggs are cooked through. Leave to stand for 1-2 mitres, divide into 4 slices and serve with the rocket.
