SW recipe: Cheesy stuffed tomatoes


  • 2 beef tomatoes
  • rice
  • chicken stock
  • peas
  • carrots
  • any other veg you fancy
  • 30g cheddar


Turn your oven on to 350F/180C/GM 4

Place 450ml of chicken stock in a pan, bring to the boil then add 50g of rice. Cook according to the instructions; remove when still slightly al dente.

Remove the tops from both tomatoes and, taking care not to cut through the outside, hollow out the tomato.

Once the rice is cooked, drain it and rinse minimally, to remove any excess starch without washing away all of the stock flavour. Add to the tomato bits and juices in the bowl.

Add any other veg you want to include, add 30g of grated cheddar (or other choice of cheese) to the  stuffing mix and stir through.

Using a teaspoon, fill the tomatoes and return their lids.

Place on a baking tray and cook in the over for around 10mins, until the tomato flesh is soft.
