SW recipe: Cherry, vanilla & cardamom baked cheesecake

Serves 10

Low-calorie cooking spray

12 reduced-fat rich tea biscuits

50g low-fat spread


For the filling:

500g plain quark

200g fat-free natural fromage frais

2 level tbsp sweetener granules

2 tsp vanilla extract

3 medium eggs, lightly beaten

5 cardamom pods, seeds removed and crushed (pods discarded)


For the cherry topping:

250g frozen pitted cherries

200g fat-free natural fromage frais

1 level tsp sweetener granules


1 Preheat your oven to 160°C/fan 140°C/gas 2. Spray a deep, non-stick, 20cm loose-bottomed tin with a little low-calorie cooking spray. Line the base with baking paper.

2 Put the biscuits in a plastic food bag and bash with a rolling pin to make fine crumbs. Put the spread in a small, non-stick saucepan and place over a low heat until melted, then stir in the crumbs. Spoon into the tin and, using the back of the spoon, press down to cover the base evenly. Freeze or chill while you make the filling.

3 For the filling, mix the ingredients in a large bowl using a balloon whisk until well combined. Spoon over the biscuit base and smooth the top. Bake for 55-60 minutes, or until almost set with a slightly wobbly centre. Turn off the oven and partially open the door. Leave the cheesecake inside to cool.

4 Meanwhile, for the topping, leave the cherries to defrost in a colander over a bowl. Once soft, roughly chop a third of them, leaving the remaining cherries whole. Discard the juice. Mix the fromage frais with the sweetener, then swirl in the chopped cherries.

5 Carefully remove the cheesecake from the tin, discard the baking paper and place on a cake stand or plate. Evenly spread over the cherry topping, then add the whole cherries. Cut into 10 equal slices to serve.
