SW recipe: Chicken and broccoli casserole

Serves 4

Ready in about 40 minutes


Low-calorie cooking spray
1 onion, finely chopped
1 garlic clove, crushed
500g floury potatoes, such as Maris Piper or King Edward, peeled and cut into bite-size chunks
4 carrots, peeled and sliced diagonally into chunks
1 sprig of fresh rosemary
1 litre chicken stock
1 tsp mustard powder
4 skinless and boneless chicken breasts, sliced into thick strips
1 large broccoli head, cut into small florets
Juice of 1 lemon
10g fresh flat-leaf parsley, roughly chopped, to serve


1 Spray a deep, flameproof casserole dish with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 2-3 minutes. Add the garlic, potatoes and carrots, and stir-fry for a further 2-3 minutes. Add the rosemary and stock, and simmer for 15 minutes, stirring occasionally.

2 Mix a little of the stock from the casserole with the mustard powder, then pour back in. Add the chicken, broccoli and lemon juice, and simmer for 5-6 minutes, or until the chicken is cooked through. Discard the rosemary sprig, sprinkle over the parsley and serve.
